Marwari Athana Hari Mirch Achaar

In Indian households, achaar is a great accompaniment of roti, parantha, poori, khakhras, mathri,etc.  Athana is a small village in Rajasthan which is famous for its long green chillies. These chillies are packed with flavor and are great in taste when served as "athana hari mirch achaar". Basically, these long chillies are filled with a blend of spices like mustard, fenugreek, salt, dry mango powder, hing, etc.
I prefer to cut these into pieces and then mix them with spices and preserved. As achaars are generally made with lot of oil so people always avoid to eat. But you can eat this achaar guilt free with roti, parantha, etc

Benefits of green chilies:

Method:
  1. Thoroughly wash the green chilies.
  2. Wipe them with a cloth. Make sure they should not be damp.
  3. Chop the chilies as shown in the picture. Take out the seeds of chilies by tapping them in a sieve.
  4. Now add fenugreek powder, mustard powder, salt, red chili powder, dry mango powder to the chilies.
  5. Mix the spices thoroughly with the chilies.
  6. Store them in an air tight container.
  7. After pouring them in the container add 1 tsp of oil in it and then mix thoroughly and cover it with the lid.
  8. Now keep it in sunlight for 1 day so as the spices will blend with the chilies.
  9. Store in refrigerator and enjoy with the bread of your choice.
Note:
  1. The chilies should be wiped out thoroughly.
  2. Prepare the pickle into small batches and eat fresh every time.
