Cheese Corn Spinach sandwich

Kids always love to eat cheesy peasy mouth watering delicacies. They are generally bored with the monotonous routine of carrying parantha-sabji in their lunch boxes and of course every sunday they does not relishes usual poha, parantha or upma.
Today, i have got a recipe which would definitely curb the cravings of our kids and is a sure shot health booster for them. it is "cheese corn spinach sandwich".
Yesssss, your mouth is watering just by the name.


        Spinach.... how can i forget our Popeye 💪 who was always on to something after eating spinach.

• Spinach is a super food.
• It is loaded with tons of nutrients in a low calorie package.
• It is also important for skin, hair, and bone health.
• It provides protein, iron, vitamins, and minerals. 
   
  Cheese.....
   
  • It contains  good amount of proteins, Vitamin A, riboflavin, calcium, phosphorous, zinc, and Vitamin B12 and thus, in turn, it is excellent for skin, prevents cavity formation, good for hair growth, prevents cancer, boost immune system and cures migraine too.
    Looking to the other side of the coin, it increases weight 😂.
     
    
    
  Corn...
   
  It contains lot of water and is thus excellent for digestive system. 
   
  Recipe:
   
  Preparation time: 20-25 minutes
  Serves: 2-4 people
   
  Ingredients: 
   
  • spinach       250gms
  • corn            200gms
  • cheese        100gms
  • paneer        50gms
  • butter         50 gms(optional)
  • salt as per taste
  • white pepper 1 teaspoon
  • brown bread 4 slices (sandwich bread)
   
  Method:
   
  1. Wash spinach thoroughly. 
  2. Blanch the thoroughly washed spinach.
  3. Puree the spinach finely.
  4. Wash the corn. To soften the corn boil it thoroughly in hot water.
  5. After 7-8 minutes, take it out of flame and strain the corn with the help of a strainer. 
  6. Now add little butter in a pan and heat it.
  7. Add the boiled corn and pureed spinach to it.
  8. Cook them for 2 minutes.
     
  9. Add grated paneer to it.
  10. Add white pepper and salt to it.
  11. Let it cook for another 2 minutes.
      
  12. Turn off the flame and let it cool.
  13. Meanwhile, prepare the bread slices and apply butter to one-one side of both the breads.
      
  14. Put spinach-corn mixture on the side where butter is applied and spread it properly.
      
  15. Now grate cheese on it and cover with the another bread slice.
      
  16. Now you can toast it on the tawa or in a toaster.
  17. I did it on non stick tawa. Cover it with a lid in order to get the cheese cooked nicely.
  18. Turn the sandwich and cook from the other side too.
  19. Soon you will observe cheese oozing out of the breads showing that it is nicely cooked.
  20. Turn off the heat.
  21. Serve this gooey, cheesy sandwich hot.
      
      
      
      
   

     Note:

• Using of butter throughout the process is completely optional. Those who are fitness freaks can completely omit this.
• Also for the fitness freaks, usage of cheese can be minimalised by adding half of paneer and half of cheese.
• I used white pepper because it tastes better than black pepper. But you can use black pepper too in the same quantity.
• You can also toast it in a grill sandwich maker to give it an added look.
• Blanching is a cooking process wherein the food substance, usually a vegetable or fruit, is scalded in boiling water, removed after a brief, timed interval, and finally plunged into iced water or placed .
